Baked Oatmeal Cups with Raisins and Walnuts

Author:  Beachbody Total Time:  45 min. Prep Time:  15 min. Cooking Time:  30 min. Yield:  12 servings, 1 cup each Ingredients: Nonstick cooking spray 2 large eggs, lightly beaten 1 tsp. pure vanilla extract 2 large bananas, mashed 1 Tbsp. raw honey 2½ cups old-fashioned rolled oats 1 Tbsp. ground cinnamon 1½ tsp. baking powder 1½ cups unsweetened almond milk ¾ cup chopped raw walnuts ¼ cup raisins Preparation: 1. Preheat oven to 350° F. 2. Prepare twelve muffin cups by coating with spray. Set aside. 3. Combine eggs, extract, bananas, and honey in a large bowl; mix well. Set aside. 4. Combine oats, cinnamon, and baking powder in a medium bowl; mix well. 5. Add oat mixture to egg mixture; mix well. 6. Add almond milk; mix well. 7. Divide oat mixture evenly between prepared muffin cups. 8. Top evenly with walnuts and raisins. 9. Bake 26 to 30 minutes, or until golden brown and toothpick inserted into the center comes out clean. Author: Beachbody Serves: 15 servings, 1 serving each Ingredients 1½ scoops Vanilla Shakeology ½ cup old-fashioned rolled oats ⅓ cup all-natural smooth almond butter 4 Medjool dates, coarsely chopped ¼ cup raw walnut pieces ¾ cup shredded carrots ½ tsp. ground cinnamon ¼ tsp ground cloves ¼ tsp ground ginger Instructions Combine Shakeology, oats, almond butter, and dates in food processor; pulse until dates are incorporated. Add walnuts, carrots, cinnamon, cloves, and ginger; pulse until just blended. Roll into fifteen balls, about 1-inch in diameter each. S’mores Shakeology (without coffee) Total Time:  5 min. Prep Time:  5 min. Cooking Time:  None Yield:  1 serving Ingredients: 1 cup unsweetened vanilla almond milk 1 tsp. pure vanilla extract 1 scoop  Chocolate  Shakeology 2 tsp. ground whole wheat graham cracker crumbs,  divided use 1 cup ice Preparation: 1. Place almond milk, extract, Shakeology,  1 tsp.  graham cracker crumbs, and ice in blender; cover. Blend until smooth. 2. Pour into a serving glass and garnish with  remaining 1 tsp.  graham cracker crumbs; serve immediately. S’mores Shakeology (with coffee) Total Time:  5 min. Prep Time:  5 min. Place almond milk, coffee, extract, Shakeology,  1 tsp.  graham cracker crumbs, and ice in blender; cover.

Healthy PB Cups

Peanut Butter Cups made Healthy   Healthy Peanut Butter Cups (Makes 2 servings) Total Time: 40 min. Prep Time: 10 min. Cooking Time: None 2 tsp. unrefined coconut oil, melted 2 Tbsp. powdered chocolate peanut butter (like PB2) 2 tsp. Chocolate  Shakeology 2 Tbsp. water 1. Combine oil and powdered peanut butter in a small bowl; mix well. Set aside. 2. Combine Shakeology and water in a small bowl; mix until it has a pudding-like consistency. Set aside. 3. Coat two foil muffin liners evenly with half of peanut butter mixture. Top evenly with Shakeology mixture and remaining peanut butter mixture. 4. Freeze for 30 minutes, or until firm.
